Chocolate Coffee Fudge

This rich chocolate fudge is ridiculously easy,  trader joe’s using condensed milk, chocolate chips, and instant coffee. It uses only 3 ingredients and takes only a few minutes to prepare.

Years ago my co-author Wona called me late in the day asking for a chocolate recipe that was easy and fast – her husband’s department was having a chocolate-themed contest the next day and she was drawing a blank. She made this fudge and it won, beating out a multitude of extravagant desserts. When she was asked for the recipe, she was almost embarrassed to share it given how simple it is!

You can skip the coffee or add just half. In general, a hint of coffee enhances the taste of chocolate and lifts it to new flavor highs. Try adding a small amount of instant coffee the next time you make a chocolate dessert.

Ingredients

1 (14-oz) can sweetened condensed milk

2 Tbsp instant coffee

1/2 Tbsp water

1 (12-oz) bag semi-sweet chocolate chips

Instructions

1.) Heat condensed milk in a heavy saucepan over medium heat. You want it warm enough to melt the chocolate chips, but not bubbling.

2.) Dissolve instant coffee in water (it will be thick) and stir this paste into the condensed milk.

3.) Add chocolate chips, reduce flame to low, and stir until melted and smooth. Be careful not to scorch fudge.

4.) Pour into an 8×8-inch pan lined with waxed paper or parchment paper (if not using waxed paper, lightly oil pan). Use a silicone spatula to make it easier to get it all out. Chill in fridge until set, about 2 hours. trader joe’s

Notes

The waxed paper will let you simply lift the fudge out of the pan. When cutting fudge, a plastic knife is easiest. If using a regular knife, wipe it clean in between cuts.

Makes about 20 small pieces
